How to make a mayonnaise at your home

What is a Mayonnaise?

Mayonnaise is an emulsion of oil, egg yolk, and an acid, either vinegar or lemon juice; there are many variants using additional flavorings. The color varies from near-white to pale yellow, and its texture from a light cream to a thick gel

How to make Yours

2 eggs
Tomato salt (sea salt) ¼ of a spoon
1 tablespoon Dijon mustard
White vinegar (white vinegar) 2 tablespoons
½ lemon
Vegetable oil 500 ml

That’s how it’s done

First, whisk the egg yolks well into the sauce
Add the mustard and continue whisking vigorously
Pour in ½ of the oil slowly but continue to whisk for between three and five minutes.
Add the vinegar and stir
Add the remaining oil slowly and continue to whisk
Add salt, lemon juice and a little vinegar if needed
Mix it well and put it in the fridge
This mayonnaise can last up to a week if you keep it in the fridge
